1 lb. ground beef
1 small onion, diced
1 large bell pepper, diced
1 can (29 oz.) diced tomatoes
1 (10 oz.) can tomato soup (or tomato sauce)
1 1/2 boxed chicken broth (or beef broth) I used bone broth in the box
2-3 cups riced and steamed cauliflowe
1 tbsp. sugar substitiute
1 tsp. garlic powder
salt & pepper, to taste
shredded cheddar cheese, for topping
In a large pot, brown and crumble ground beef along with diced green peppers and onion over medium-high heat.
When meat is thoroughly cooked, drain excess grease from beef mixture.
Put beef mixture back into pot.
Add in diced tomatoes, chicken (or beef) broth and tomato soup (or tomato sauce).
Give it all a good stir.
Then add in rice.
Stir again.
Then stir in seasonings; sugar, garlic powder, salt & pepper (to taste).
Cover and let soup simmer on low heat for about 30 minutes to let all the flavors blend. (The longer it simmers, the thicker it will get.)
Serve with shredded cheddar cheese on top of each serving.

I forgot that you sauted the vegetables so I cut them all up and put them in the broth with the chicken do you think it will be ok ? I am really disappointed that I didnt saute the vegetables first because I know when you saute the vegetables first it releases the flavor right into the broth . Hopefully it will come out good. how much worcestershire sauce do you use? next time I will know better. I like to follow things exact . and I usually do .

Carrots? Take those out for low carb.
I list the nutritional facts for my recipes with the ingredients and amounts that I use for this reason. One serving of the soup is only 4.5 net carbs- including the carrots.

Zuccini, onions, celery, worchestershire, all has some carbs. When people dont know much about low carb, they will follow a recipe, not understanding that carrots are high in carbs.
Lynn M itโs low carb, not no carb. Carrots are also really good for you but you can customize the veggies to be whatever you desire.

Parsnips are so tasty but they arent low carb sadly, one of the highest in carbs, of course because theyre my fave.
Do you recall what kind of chicken broth you used?
I usually use Wegmans brand or College Inn but whatever kind I use I get the one marked Lower Sodium so I can control the saltiness ๐
I added a pack of fresh green beans (cut in half), 1c of frozen corn, and 1c of frozen peas. I love this. I never had fennel, until I made this recipe. If you add some kale to this (which I will do the next time I make this), it will be a superfood. Ill live to be 150 years old, if I keep eating this!!!!
