Swiss chard is pretty easy to grow – especially in a northern or mountainous climate. The bugs like the leaves – but if you keep the bugs out, it is easy to grow. I eat the leaves even if bugs have chewed on them.
Also, once you get asparagus started – which takes a while – but once it is started, very easy to grow. And nothing tastes better than home grown asparagus.

Thomas, my husband has a very big misunderstanding for him all leaves are spinach. We have plenty mustered leaves in my garden which he thinks is harmful for those who have high level of potassium in the body. I know about the spinach. I dont think mustered leaves are also high in potassium.

You should look into and do a video on sweet potato greens (not regular potato greens, those are poisonous). Supposedly theyre extremely high in a lot of vitamins and minerals and most people just throw them in the compost when they harvest their sweet potatoes.

I’m a big fan of spinach and kale. I use them in smoothies, egg cups and use the kale to make chips on the oven. They also freeze very well. The only leafy green I really don’t like is Swiss chard because it’s so bitter (my mom however is a huge fan-I guess she was onto something).

Red Chard is AMAZING! I take the big leaves and grill them in sea salt and olive oil on a big skillet. put a little cheese in between and its kind of like a quesadilla! I like eggs and sour creme with chives and siracha on top. or even better one whole egg and an extra yolk. cut with a fork and steak knife. Bacon, sausage, or steak on the side. I think the chard tastes better too its not so bitter. This meal fills an entire plate (mainly because its flat and thin) and is under 500 calories. Ive done this with kale, collards, and spinach too. Well the spinach i do more of a scramble because the leaves are too small. Ive been eating a variation of this every morning before a day of construction work and I dont even want to eat at all the rest of the day. The keto macros are on point. Everybody needs to eat this meal! If i get in a bad situation I keep a keto lunch packed but I usually eat that for dinner instead. Usually a bag of veggies, sour creme dip, beef bologna and cheese cubes, and greek yogurt with blueberries. And a pocket full of almonds and pumpkin seeds with chili lime seasoning. This is literally all my body wants to eat ever. Am I missing something here? I dont look nearly as cut as you do!

I went on a stroll thru an Asian grocery store the other day and couldnt even count the number of veggies that I cant get at WinCo. I need the stats on those! Bok Choi is one of my all-time favorite veggies! I got into Ketosis for my first time eating alot of that. But there are so many more.

I like buying fresh Herring. Here in the Uk it is pretty cheap at only 36p per 100g (approx 47 US cent). I find that eating eggs, liver and herring together every day is not only way healthier and much more nutrient dense, but is a lot cheaper than other more popular protein sources.
Choline and basically every nutrient from eggs. Ground down the egg shells for a natural calcium supplement. B12, vit A, folate, iron and copper in liver. Vitamin D, b12, b6, omega 3, folate and magnesium in herring. Add some avocados, spinach, swiss chard (or even bone broth) for all the rest of the nutrients.
Go low carb with sweet potatoes and beans for carbs or alternatively eat lots of fat on the keto diet (75-80%) for caloric needs. Have a 24 hour fast at the end of every week.
Yes, eating the same thing everyday can get boring and it is very restrictive and anal, but for me this is the healthiest diet I have ever tried and the protein sources mean that it is pretty cheap too. I suffer from Crohns and Ankylosing Spondylitis at the age of 26, but my symptoms disappear almost to nothing when I eat this way for a few months but return with vengeance as soon as I eat just a bite of the whole grain based food pyramid that we are recommended. Given the clear anti-inflammatory and immunity benefits that I have seen I can 100% recommend this diet to anyone whether they have similar issues or not.
